Ingredients:
- Set oven temperature to 400°F.
- Four chicken breasts, skinless and boneless
- 1 teaspoon of Italian spice blend
- One teaspoon of powdered garlic
- 1 teaspoon smoked paprika Add salt and pepper to taste
- 12 asparagus stalks with ends cut
- One ounce sun-dried Chopped tomatoes, four pieces of mozzarella cheese
- One tablespoon of olive oil
Instructions:
Transfer the chicken to a sanitized cutting board and season with salt, pepper, paprika, garlic powder, and Italian seasoning.
Cut each one lengthwise so that the pockets are formed.
Take care not to slice through completely.
Place three asparagus sprigs and a few sun-dried tomato slices within a slice of mozzarella, then roll it to enclose them.
Pack it inside the chicken breasts.
Use a toothpick to close the pocket.
